- 1 med zucchini
- 1 med summer squash
- 1 med red bell pepper
- 1 med yellow bell pepper
- 1 pound fresh asparagus
- 1 red onion
- 1 tbsp extra virgin olive oil
- 2 tsp Mrs Dash (or other seasoning blend)
Heat oven to 450 degrees F. Cut up the vegetables into bite size pieces. Then place in a large roasting pan. Toss with olive oil and Mrs. Dash. Spread in a single layer in the pan and roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender.
