Oven Roasted Vegetables

  • 1 med zucchini
  • 1 med summer squash
  • 1 med red bell pepper
  • 1 med yellow bell pepper
  • 1 pound fresh asparagus
  • 1 red onion
  • 1 tbsp extra virgin olive oil
  • 2 tsp Mrs Dash (or other seasoning blend)

Heat oven to 450 degrees F. Cut up the vegetables into bite size pieces. Then place in a large roasting pan. Toss with olive oil and Mrs. Dash.  Spread in a single layer in the pan and roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender.

Serves 4    Per serving  90 calories, 5 g protein,  15 g carbs,  3 g fat
